Salads are all about flavour, texture and colour keeping that in mind choose the freshest ingredients when making a salad. Summer offers a wide variety of vegetables that can be used to make healthy and delicious salad bowls.
Start with a base of fresh salad greens. Salad greens should be crisp and vibrant in colour and have a certain crunch when you bite into it. There is so much variety of greens to choose from, I have choosen cos lettuce leaves for the base of this salad.
Add to the base of greens, tomatoes for a pop of colour.
Yellow capsicum for texture and sweetness.
Sliced cucumber for that extra crunch and mild refreshing taste.
Artichoke hearts for flavour and texture.
Kalamata olives for that saltiness.
Red onion rings for spiciness and colour.
Now you have built your salad it is time to jazz it up with a dressing. Sometimes all that is needed is a simple dressing. A combination of freshly squeezed lemon juice, extra virgin olive oil, a dash of apple cider vinegar, and sea salt is all that is needed for this salad.
Add all the ingredients in a bowl and whisk together. Add the dressing to your salad just before serving. Drizzle over vegetables and give a light toss to combine.
