Love Me Raw Kale Salad

Enjoy this simple raw salad for its flavours and vibrant colours. Kale is the star in this salad, a great leafy green some have named a superfood because it is loaded with powerful antioxidants. It is a nutritional powerhouse consisting of high amounts of Vitamins A, C, K and minerals of calcium and magnesium. Eating a diet that consists of plenty of coloured fruits and vegetables is the best way to get the right amount of antioxidants. Experiment with different leafy greens and raw vegetables for a power packed salad.

Kale and radish were sourced from my garden for this salad, I find nothing more wonderful than harvesting food from the garden. Choose kale leaves that are young and soft.


A small bunch of tuscan kale or curly leaf kale

Juice of 1/2 a lemon

2 teaspoon olive oil

sprinkle of salt


*Wash kale and pat dry. Gently tear leaves from the stem and place in a bowl

*Add juice of the lemon, olive oil and salt. Using your hands massage the leaves by squeezing and releasing. Continue until the leaves have reduced in size and are soft and wilted. Leave to rest while you prepare the rest of ingredients. Massaging kale allows it to break down its fibrous structure making it easier to chew and digest.


2-4 cherry radish, sliced

1/2 yellow/orange capsicum julienned thinly

1 firm medium size avocado sliced

Fresh nasturtium flowers or other edible flowers (optional)


*Slice radish with a sharp knife or a mandolin if you have one

*Julienne capsicum into thin strips

* Slice avocado

*Add radish, capsicum and avocado to massaged kale


2 tablespoons orange juice

2 teaspoons olive oil

1/4 teaspoon dijon mustard (optional)

salt to taste


*Place all ingredients in a bowl and whisk together, or place in a small jar with a lid and give a good shake.

*Just before serving drizzle dressing over salad and lightly toss, garnish with flowers
