A Healthful Trio of Flavourful Salads

Eat more raw fresh unprocessed foods and your body will love you for it.

Here are three simple raw salads to make, adding flavour, texture and colour to your meal. Choose salad ingredients that are fresh and vibrant in colour, not bruised or wilting. Support your local growers, look at what is in season and create beautiful healthful salads.


CRUNCHIE RAINBOW VEGGIE SALAD



CRUNCHIE RAINBOW VEGGIE SALAD


INGREDIENTS

1 cup or 1/4 small size white cauliflower, finely chopped

1 cup or 1/4 small size purple cauliflower, finely chopped

1/2 telegraph cucumber, diced small

3 medium size radish, diced

1/2 a medium size purple onion, finely chopped

1/2 cup tightly packed or a small bunch Italian parsley, finely chopped

1/2 cup tightly packed mint, finely chopped

Extra 1/2 telegraph cucumber, thinly sliced for garnish


METHOD

*Prepare all the above ingredients and place in a large bowl.

*Toss the salad ingredients together until well combined.

*Add the dressing and mix through just before serving.

*Garnish with the extra cucumber if you wish.


DRESSING INGREDIENTS

2 tablespoons fresh lemon juice

3 tablespoons fresh orange juice

1 teaspoon lemon zest or salted lemon

2 teaspoon fresh grated ginger

2 teaspoon coconut aminos or maple syrup (optional)

3/4 teaspoon pepper flakes

salt to taste


METHOD

*Place all the dressing ingredients into a small bowl.

*Whisk ingredients together until throughly combined.


TO SERVE

*Just before serving drizzle the dressing over the salad and gently toss to coat.

*Transfer salad to serving dish or platter.

*Garnish with extra cucumber or fresh herbs or edible flowers.



SUMMER HARVEST SALAD



SUMMER HARVEST SALAD


SALAD INGREDIENTS

1 Lebanese cucumber, sliced

3 medium size tomatoes, quartered

3 orange mini roma tomatoes, halved

1 large handful baby spinach leaves or mixed salad leaves

2 large tuscan kale leaves, de-stem then shred

1 small handful of finely shredded purple cabbage

1 small red onion, finely sliced


DRESSING INGREDIENTS

2 tablespoon fresh lime juice

1 tablespoon coconut aminos (optional, for sweetness)

1 clove garlic (minced)

1 teaspoon mustard (optional)

1-2 tablespoon water (to thin)

Salt to taste


METHOD

*In a small bowl whisk together dressing ingredients.

*Thin out with extra water as required.

*Taste for rightness.


ASSEMBLE

*Place all salad ingredients into a serving bowl.

*Make dressing and drizzle over salad when ready to serve.


Garnish with edible flowers just before serving.



BEETROOT APPLE SLAW SALAD


BEETROOT APPLE SLAW SALAD


SALAD INGREDIENTS

1 medium size beetroot, shredded

1 medium size apple with skin, shredded

1/2 medium size red onion finely diced


DRESSING INGREDIENTS

1 tablespoon lemon juice

1 teaspoon apple cider vinegar

2 teaspoon olive oil (optional

salt to taste


ASSEMBLE

*To a large bowl add salad ingredients and toss to combine

*Whisk together dressing and add to salad. Toss lightly and serve on a bed of fresh greens of your choice.
