Pitaya Smoothie Bowl

Smoothie bowls are a wonderful way to start the day. Get all your fibre, nutrients, antioxidants, vitamins and minerals in one bowl.

The main ingredient in this smoothie bowl is pitaya commonly known as dragon fruit. This fruit belongs to the cactus family. The flesh comes in colours of white and red, red being more dominant in flavour. The fruit is harvested through the summer months here in Australia and is available at fruit and vegetable venues and market stalls.

When the fruit is in plentiful supply I like to buy extra and place it in the freezer so I can enjoy this amazing fruit throughout the year.

EQUIPMENT

blender or food processor. Serves 1-2


INGREDIENTS

2 large bananas, frozen

1 red pitaya (scoop out the flesh)

1/4 cup plant based milk or water


METHOD

*Place ingredients in the blender.

*Add extra liquid until the blades start turning freely, blend to a smooth consistency.

*Pour into serving bowls and decorate with fresh fruit, granola and seeds.
