Enjoy kale in this simple healthful salad a leafy green abundant in goodness.
Choose kale leaves that are young, soft and tender.
Dress up this leafy green with pops of colour.
Look for soft textured vegetables such as tomatoes. Tomatoes come in all shapes, colours and flavour.
Add beans for extra protein. They come in different shapes, flavour and colours such as brown to black to pink to golden.
For added crunch choose from onion, celery, radish, capsicum, snow peas, carrot, cauliflower, broccoli.
Add a simple dressing to finish it off.
RECIPE
1 small bunch curly kale
1/2 medium size red onion finely diced
6 mini Roma, cherry or other small tomatoes
1/2 cup of red kidney beans or beans of choice, (chickpea, lima, cannelloni, black bean)
METHOD
*Strip kale from the stems and tear into bite size pieces.
*Arrange kale on a serving plate or platter.
*Slice tomatoes, choose from various colours and shapes
and scatter over the kale.
*Drain and rinse beans, add to salad.
*Scatter finely diced onion over salad ingredients.
* Drizzle dressing and toss lightly to combine just before serving.
DRESSING
A squeeze juice of 1/2 a medium size lemon
1 - 2 tablespoon extra virgin olive oil (or hemp or flax oil)
(oil is optional leave out if you don't use oil)
1/4-1/2 teaspoon pink salt
1/4 teaspoon apple cider vinegar (optional)
1 teaspoon coconut aminos for sweetness (optional)
METHOD
*Add all the ingredients to a small bowl
*whisk together until thick and creamy
*Add to salad and toss just before serving
