Enjoy this vibrant, tasty, so good for you wellness bowl. Create your own nutritious and delicious bowl. Crispy sweet chilli tofu is the main protein in this bowl add your favourite grain and side salads and there you have it a complete meal ready to eat for lunch or dinner.
EQUIPMENT: Flat pan, medium size mixing bowl, small saucepan
CRISPY SWEET CHILLI TOFU
TOFU
360g firm tofu
3 heaped tablespoons cornflour
light tasting cooking oil
METHOD
*Drain the water from the tofu
*Slice tofu into large bite size cubes
*Toss with cornflour, shake off excess
*Add tofu to a hot pan with a little oil
*Pan fry on medium heat until crisp and golden
*Remove from pan and set aside while you make the sauce
SAUCE
1 1/2 teaspoon cornflour
1/4 cup purified water
2 tablespoon light soy sauce
2 tablespoon apple cider vinegar or lemon juice
3 tablespoons sriracha sauce
2 teaspoon maple syrup
2 teaspoon garlic powder
1 1/2 teaspoon miso paste
1/4 cup water
1 1/2 teaspoon cornflour
white sesame seeds for garnish
METHOD
*Add the cornflour to a small bowl and mix with a little water to form a slurry
*Next add the sauce ingredients to a small saucepan and whisk together over a medium heat
*When the sauce starts to simmer stir in cornflour slurry, slowly. Continue stirring until sauce thickens. Thin out sauce with more water a little at a time if sauce become too thick.
*Remove sauce from stove top. Sauce should be thick and golden taste for rightness
*Pour sauce over tofu and toss lightly to coat
*Garnish tofu with sesame seeds

Shredded purple cabbage and kale leaves
Avocado slices sprinkled with black sesame
Micro green onion and pea shoots
Wild rice
