Bruschetta - A taste of the Mediterranean


A delicious appetizer that revolves around a timeless Italian classic : crisp toasted bread topped with vibrant fresh ingredients. Bruschetta is incredibly versatile and serves as a blank canvas for a wide variety of flavours.



THE PERFECT BASE

Start with slices of artisan bread, sourdough, ciabatta or a crusty baguette. Lightly brush with a good olive oil and then place under the griller or in the toaster until crispy and golden. Rub toasted slices with fresh garlic if you choose.

Use tomatoes at room temperature for the best flavour

Fresh home made basil pesto



BASIL PESTO

INGREDIENTS

2 cups fresh basil leaves, packed

1/3 cup pine nuts

2-3 cloves garlic, peeled

1/4 cup vegan parmesan or nutritional yeast (for cheesy flavour)

1/2 cup extra-virgin olive oil (adjust as needed)

Juice of 1/2 lemon

Salt, to taste



METHOD

*Wash and dry the basil leaves to remove any moisture.

*If desired, toast the pine nuts in a dry pan over medium heat for 2-3 minutes for extra flavour, then let cool.

*In a food processor, combine the basil leaves, pine nuts, garlic, vegan parmesan or nutritional yeast, and lemon juice.

*Pulse until ingredients are finely chopped, scraping down the sides as needed.

*While the processor is running, slowly pour in the olive oil. Blend until the mixture reaches a smooth consistency. Adjust with a bit more oil if necessary.

*Add salt to taste. Give the pesto one final blend.

*Use the pesto right away or store it in an airtight container in the fridge for up to a week.

Smashed avocado lightly salted

Heirloom tomato thinly sliced

Topped with micro greens

Light sprinkling of salt


SLICE TWO

Mashed non dairy feta

Heirloom tomato thinly sliced

Basil pesto

Sprinkle with pine nuts

Light sprinkling of salt




Enjoy as an appetizer, a light snack or the centre piece of a brunch spread
