This is a quick and easy recipe using tempeh as the main ingredient. Tempeh is a plant based high protein food made from fermented soybeans. Tempeh has a mild nutty flavour with a soft chewable texture. It is great marinated as it takes up the flavours of the marinade then it can be baked or fried.

INGREDIENTS
TEMPEH: a high protein fermented food made from fermented soybeans and or other beans, grains and some times even seeds. It comes in a slab and can be sliced into strips, sheets or cubes. It has a mild flavour and lends itself well to being marinated as it absorbs whatever flavours are mixed with it. It has a ton of benefits such as lowering blood pressure, improving cholesterol, protecting your heart, promoting good bone health, improving insulin resistance, lowering inflammation. It also has cancer fighting and antioxidant properties.
HARISSA PASTE: or hot chilli paste, is spicy and fragrant, add a small amount to recipe to achieve a spicy hot taste.
SOY SAUCE: light soy sauce or Tamari can be used to give saltiness to the marinade.
LIQUID SMOKE: gluten free an ingredient used to give flavour.
APPLE CIDER VINEGAR: adding an acid to balance out the flavour.
CHIPOLTE POWDER: made from jalapeño chilli used to give flavour.
SMOKED PAPRIKA: a ground spice made from a mixture of dried peppers from the capsicum family, used to give flavour.
CUMMIN POWDER: used to give flavour.
GARLIC POWDER: used to give flavour.
GRAPE SEED OIL: a light tasting oil.
MAPLE SYRUP: for sweetening to balance the flavour of the marinade.
EQUIPMENT: flat dish to marinate tempeh, baking sheet or frypan
RECIPE
MARINADE
2 teaspoon chipotle powder
2 teaspoon smoked paprika
2 teaspoon garlic powder
2 teaspoon cumin powder
2 tablespoon maple syrup
4 tablespoon light soy sauce
2 teaspoon apple cider vinegar
1 teaspoon liquid smoke (optional)
4 table spoon grape seed or light tasting oil
2 teaspoon harissa paste
300g tempeh
METHOD:
*In a bowl place all the ingredients for the marinade, mix together to form a smooth runny paste, set aside.
* Place the tempeh on a cutting board and with a sharp knife slice into stripes 5cm thickness.
*Pour marinade into a shallow flat dish.
*Add tempeh strips and cover with marinade, turning strips so the marinade is distributed evenly.
*Set aside to marinate for at least 2 hours.
*Take marinated tempeh strips and place on a baking sheet.
*Bake at 180 degrees celsius for at least 2o minutes or until, golden brown.
*Remove from oven and let cool.
*For frying method place a little oil in a pan and heat on medium heat.
*Place strips in pan and cook on medium to low heat turning for even cooking until strips are cooked nice and golden a few minutes each side.
*Use tempeh strips in a healthy goodness bowl, in a stir fry, in a pasta, in a healthy bun with all the trimmings.
