I am a lover of beans. In the bean kingdom there are many varieties of beans both fresh and dry providing you with a great source of dietary fibre, protein, vitamins and minerals. This dish is vibrant in colour and will improve vitality and your overall health.
Ingredients
1 medium size bunch of green beans
1 medium size bunch of yellow butter beans
6 green snake beans
6 red snake beans
1/2 cup red kidney beans
1/2 cup edamame beans
1/2 medium size red onion thinly sliced
1 small bunch fresh coriander or Italian flat leaf parsley chopped
Juice of 1 lemon
3 tablespoon extra virgin olive oil
1 teaspoon apple cider vinegar
salt to taste
Method
*Trim beans and cut into lengths you desire.
*Bring a pot of water to the boil add prepared beans and 1/2 teaspoon of salt.
*Cook 2 to 3 minutes, drain water from beans and transfer to a bowl filled with ice water to stop them over cooking and preserve their crunch. Once cool drain the beans.
*Place beans in a bowl and add kidney beans and edamame beans.
*Add to the beans thinly sliced red onion and chopped coriander.
*For the dressing, in a separate bowl add freshly squeezed lemon juice, extra virgin olive oil, apple cider vinegar and salt.
*Whisk together to combine.
*Drizzle dressing over beans and toss to coat.
