Delightful Sunburger Patties

Golden, delicious and packed with plant-based goodness, these Sunburger Patties are a tasty way to enjoy fresh vegetables in a hearty, savoury patty. Grated vegetables are combined with finely ground sunflower seeds, which help bring everything together while adding a delicious nutty flavour and satisfying texture.

Lightly seasoned and cooked until golden on the outside, these wholesome vegan patties are wonderfully versatile. Enjoy them tucked into a burger bun with your favourite fillings, served alongside a fresh salad, or simply on their own with a dipping sauce.

Easy to make and full of flavour, these Sunburger Patties are perfect whenever you're looking for something savoury, nourishing and delicious.



INGREDIENTS

1 cup or 165g grated raw potato, juice squeezed out

2 cups or 250g grated carrot

1 cup or 145g zucchini 

1½ cups or 200g finely chopped onion

2 cups or 260g sunflower seeds, finely ground

2 tablespoons onion powder

2 teaspoons dried thyme

1 teaspoon salt

2 tablespoons tomato paste

1 cup or 215g tomato purée

1½ tablespoons psyllium husk


METHOD

Preheat oven to 180°C (350°F).

  • Add the grated potato, carrot, zucchini and finely chopped onion to a large mixing bowl.

  • Add the ground sunflower seeds, onion powder, dried thyme and salt. Mix well to combine.


  • Add the tomato paste and tomato purée and mix until all the ingredients are evenly combined.

  • Lastly, add the psyllium husk and mix thoroughly. Allow the mixture to stand for a few minutes so the psyllium can absorb some of the moisture and help bind the mixture together.


  • Using your hands, shape the mixture into evenly sized patties.

  • Line a baking tray with baking paper and place the patties onto the tray, leaving a little space between each one.

  • Bake in the preheated oven for 20–30 minutes, or until the patties are golden and firm on the outside.

  • Allow the patties to cool slightly before serving.
